I used to take time lapse photos of pastries as they developed mold (it just seemed like a fun photo project) and was amazed at how fresh bread, with no preservatives, would develop a forest of molds and a piece of “chemical bread” would sit around for several days until mold finally developed and yet it would stay on one corner for a while and would only be one type and color.
